ROASTED MERLOT CHICKEN and GRAPES

The rich, cocoa finish of the Merlot Oil adds flair to this simple, rustic dish. You can assemble it the day before and refrigerate it overnight in its baking dish to save time on a busy weeknight.

3TbspApres Vin Merlot Oil
1TbspBalsamic vinegar
2TbspBasil, roughly chopped
0,25tspSalt
0,25tspPepper
0,50cupRed grapes
3lbs4 Chicken legs and 4 thighs, bone-in

Preparation

  1. Preheat the oven to 375°F.
  2. Whisk together the Apres Vin Merlot Oil, the balsamic vinegar, the basil, salt and pepper and grapes in a large mixing bowl.
  3. Add the chicken parts to the oil mixture and toss to coat.
  4. Snugly pack the chicken parts into an 8 x 11½” glass baking dish.
  5. Pull up some of the grapes from beneath the chicken pieces and pack them between the sides of some of the chicken parts.
  6. Roast for 45 minutes or until the chicken registers 180°F on an instant-read thermometer.

 

PREPARATION TIME: 10minutes

COOKING TIME: 45 minutes

YIELD: 8 chicken pieces, serves 4
