Our praline-style almonds couldn’t be simpler. For starters, there’s no messing around with a candy thermometer. And what a time saver! In only 15 minutes you can whip up a batch AND you can do it as much as a week ahead – but hide them away or they won’t last! Their sweet and smoldering flavor will delight your family and party guests. Wrap handfuls of nuts in cellophane and tie with a ribbon for elegant table decorations or holiday party favors.

2cupWhole almonds (unsalted, untoasted)
2TbspApres Vin Cabernet Poivre Oil
1tspKosher Salt
0,25cupCaramel ice cream topping sauce at room temperature

Preparation

  1. Line a large rimmed baking sheet with foil or parchment paper and lightly grease it. Set it aside.
  2. Heat the Cabernet Poivre oil in a medium-sized saucepan over medium heat.
  3. Add the almonds and cook, stirring occasionally, for 3 minutes or until the almonds are toasted and fragrant.
  4. Stirring constantly, carefully add the caramel sauce to the sizzling almonds. Stir vigorously to combine, and continue to stir quickly for 1 minute or until the moisture has evaporated. Do not allow the caramel to scorch.
  5. Quickly scrape the nut mixture onto the prepared baking sheet and sprinkle the nuts with the Kosher salt. With a heatproof spatula, immediately spread the nuts out on the pan in a single layer. Allow to cool completely, about 20 minutes.
  6. Serve almonds in stemmed Martini glasses for a festive presentation or store in an airtight container for up to 1 week.
