This quick to make, easy and portable salad is a tasty and impressive offering at your next potluck or picnic, or even in your weekday bagged lunch. The clean lime flavor livens up the earthy beans, and makes those delicious little grape tomatoes even sweeter.

0,50cupApres Vin Lime Riesling Oil
1TbspWhite wine vinegar
1TbspLime peel, white pith scraped out and finely chopped
1tspSugar
0,25tspSalt
0,25tspPepper
16ozNavy beans or Great Northern beans, canned or cooked, drained
2cupBaby tomatoes, grape or cherry
1cupScallions, roughly chopped

Preparation

  1. In a small mixing bowl, whisk together the Lime Riesling oil, white vinegar, lime peel, sugar, salt and pepper. Set aside.
  2. In a medium mixing bowl, toss together the Navy or Great Northern beans, the baby tomatoes and the scallions.
  3. Pour the vinaigrette over the bean mixture and toss to combine.
  4. Stays fresh in the refrigerator for 3-5 days.
