This deep and earthy vinaigrette will help you welcome a change of season. It will dress up your pan-wilted kale and swiss chard side dishes, and will also be welcome as a marinade for roasts and baked chops. Whirl the walnuts in a coffee grinder for a handy shortcut.

4TbspAprèsVin Melange a Trois Oil
1TbspWalnut Oil
1TbspRed wine
1tspBalsamic vinegar
1tspHoney
1tspGarlic, peeled and finely diced
1TbspShallots, peeled and finely diced
1tspDijon mustard
1TbspWalnuts, finely chopped
0,25tspSalt
0,25tspWhite pepper, freshly ground

Preparation

  1. Pour all ingredients together into a clean shaker bottle.
  2. Seal the bottle and shake until all ingredients are uniformly blended.
  3. Chill until serving.
  4. Prior to serving, shake the bottle again to re-emulsify.
